Recipe of the Week – Chinese Lettuce Salad!

Spring has sprung and it is feeling more like summer. My husband is outside giving the lawn it’s first haircut of the season. With the weather hot (and me not wanting to turn on the a/c in march) we are having practically no cook dinner tonight!  So what are your dinner plans? Here is ours… Chinese Lettuce Salad!

Salad Ingredients:
2 boneless, skinless chicken breasts seasoned liberally with salt, pepper, garlic and onion powder then grilled and cut into strips. (in a pinch I microwave them to speed up the process but you do loss some flavor)
1 head of lettuce – shredded (I use an organic pre-packaged spring mix )
3 green onions – chopped
1 sm. pkg. of slivered almonds
1 sm. pkg. chow mien noodles
any other salad ingredients you desire – shredded carrots, radishes, beets, beet tops, etc…

Dressing Ingredients:
1/2 c. olive oil
4 T. vinegar
4 T. sugar
2 t. garlic powder
salt and pepper to taste
mix dressing ingredients well and refrigerate.

When ready to serve mix all salad ingredients together with dressing.
