Cheesy Vegetable Soup with Cheddar Biscuits

Before Christmas my family took a vacation to Branson MO. While there we went to the Dixie Stampede which has a dinner and a show. They serve a great creamy vegetable soup and sell the mix in the gift shop. We purchased one and brought it home. After making it at home I thought that I could duplicate the recipe. So… after searching the Internet and tweaking several recipes that I found I came up with a pretty close one. After we have had it many times my husband wanted another change. He wanted something closer to a Wisconsin cheddar. Back to the grind stone we went trying and tweaking different recipes (unsuccessfully I might add). Then I read one that just added a jar of Chez Whiz to it. AHH! the light bulb went off! Why try and re-invent the wheel? So I just tried it with my existing Cream of Vegetable soup recipe and wallah! So if you are wanting to you can just omit the cheese sauce and have another yummy soup!

Soup Ingredients:

6 T. Butter
1 t. onion powder
1 t. garlic powder
2 t. corn syrup
6 T. all-purpose flour
1 t. pepper
1 t. salt
1 c. chicken broth
2 c. water
1 c. chopped celery
1 c. diced carrots
1 pint heavy cream
16 oz. jar of cheese sauce (chez whiz works well)

Melt butter in large pan. Add onion, garlic and corn syrup. Simmer 1 min. but do NOT brown. Add flour, salt and pepper and cook briefly to eliminate raw flour taste, mixing well the entire time. Add chicken broth, water and vegetables. Stir until well combined and simmer until veggies are somewhat tender but still crunchy. Add in heavy cream and cheese sauce. Combine well and simmer until thickened and cheese is melted – Do Not bring to boil it will scortch! Garnish with fresh parsley.

Cheddar Biscuits
2 1/2 c. baking mix (jiffy works well)
3/4 c. cold whole milk
4 T. cold butter
1/4 t. garlic powder
1 heaping c. grated cheddar cheese

brush on top ingredients:
2 T. melted butter
1/4 t. dried parsley
1/2 t. garlic powder
pinch of salt

Preheat oven to 400 degrees. Combine cold butter and baking mix with fork. Add cheese, milk and garlic powder. Mix by hand until well combined – do not over mix! Drop by 1/4 c. portions onto a lightly greased baking sheet. Bake 15 min. until biscuit tops begin to turn light brown. Brush tops with butter mixture and continue to bake 5 min.
