Recipe Of The Week: Kale Chips

This weeks recipe makes a great extra to a picnic or summer simple dinner. It is Kale Chips.
Most of you are now thinking, “What is kale?”  Kale is a form of cabbage only the leaves do not form into a head like a traditional cabbage. It is more like a collard green or mustard green. It is used in many things but is often mistaken for spinach when cooked down. (It is one of the ingredients in Olive Gardens Zuppa Toscana soup.)

This recipe is so easy that even the kids could get in the kitchen and help. It has the crunch and salty taste of a potato chips but much much healthier! You won’t feel so guilty for eating the entire bag and I promise you will! You can’t eat just one!!!

Olive Oil
Favorite Seasoning (garlic powder, ranch, cayenne, etc…)

First wash the kale and trim out stem. Then cut into bit sized pieces (leaving a little larger they will shrink). Toss lightly with olive oil and spread onto a baking sheet in a single layer. Sprinkle with favorite seasoning. Bake in a 300 degree oven for 20 minutes. Cool and serve!
