Recipe of the Week: Peanut Butter Sandwich Cookies and Rainbow Rice Krispies Treats

This week you get another bonus recipe! (I didn’t think that it would be fair to only let one child make the blog roll!) These recipes are kid tested and county fair approved earning blue ribbons for each in the pee wee baking contest!

Peanut Butter Sandwich Cookies

Ingredients:

1 c. butter-flavored shortening

1 c. creamy peanut butter

1 c. sugar

1 c. packed brown sugar

3 eggs

1 t. vanilla

3 c. all-purpose flour

2 t. baking soda

¼ t. salt

Filling:

½ c. creamy peanut butter

3 c. powdered sugar

1 t. vanilla

5-6 T. milk

In a lg. mixing bowl, cream shortening, peanut butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking soda and salt; gradually add to the cream mixture.

Shape into 1-in. balls. Place 2-in. apart on an ungreased baking sheet. Flatten to 3/8-in. thickness with fork; making a crisscross pattern. Bake at 375° for 7-8 minutes or until golden brown. Remove to cool on wire rack.

In lg. mixing bowl, combine filling ingredients; beat until smooth. Spread on the bottom of half the cookies; top with remaining cookies.
Don’t forget to taste test!

Yield about 4 dozen.


Rainbow Rice Krispies Treats

Ingredients:
3 T. Butter
1 pkg. (10 oz.) Marshmallows or 5 c. mini marshmallows
6 c. Rice Krispies
Assorted sprinkles

In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.


Using buttered spatula or wax paper evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray.


Cool. Cut into 2-inch squares. Best if served the same day.

Again taste testing is the best part!
