Ever since my husband and I meet he has raved about his childhood best friends mom’s homemade chicken noodles. After several failed attempts on my part to re-create them I called her and had the honor of spending the afternoon learning from one of the best cooks I know! Today I am sharing her recipe for “Noodles” along with my easy white bread recipe. They both taste so good and I guarantee will make you the star of whatever you decide to make them for!

Homemade Chicken Noodles
In large stock pot place whole chicken, onion, carrots, celery, garlic, whole black peppercorns, salt and bay leafs. Bring to a boil and reduce to simmer for about 2 hours or until chicken is falling apart and its juices are clear. Remove chicken, cool and de-bone. Strain broth, cool and skim fat.
In mixer beat 6-8 eggs along with 3T canola oil. (# eggs depends on amount of noodles wanted.)
After well beat, add flour one cup at a time until it forms a stiff dough. (about 3c. for 6 eggs or 4c for 8 eggs.)
Divide dough into 3rds. Turn each onto a well floured surface and roll very thin. Using a pizza cutter cut into thin strips until all dough is cut. At this time you have two options, either place in a single layer on a well floured cookie sheet and cover with light towel to dry overnight or skip to the next step.
Return broth to boil and add in 1/4 cup of chicken base (similar to bullion and may be substituted) and 2 qts water. Bring back to boil and slowly add in noodles stirring occasionally. Once all noodles are in simmer until noodles are cooked about 30 min. Add in chicken and return to simmer for at least 30 more minutes. reduce to warm and serve when ready!
Basic White Bread
This is the easiest, quickest and tastiest bread recipe that I have ever made. It will make you look like you have slaved away without much effort at all.
In large bowl combine 1 1/2 c. flour, 3T sugar, 1t salt and 2 pkgs quick rise yeast. In microwave safe bowl combine 1c. milk, 1.2c. water and 1/4c. butter. Microwave for 1-2 min. or until warm (test like a baby bottle on your wrist).
Add liquids to dry ingredients and mix well. Add flour to make a soft dough. ( I use my dough hook with my mixer. Add flour until it cleans the sides and form a ball.) Knead for 5 min.
Place into a lightly greased bowl and let rise in a warm place for 15 min. Shape into loaves by lightly rolling out with rolling pin then rolling back into a loaf, cinnamon roll style.
Place into greased bread pans and let rise again for 15 min. Bake @ 425 degrees for 15 min. or until they sound hollow when tapped. Remove from pan and cool on wire rack!
