Recipe of the week: Chicken Pot Pie Cupcakes

I love any recipe that is easy enough for the kids to get involved in the kitchen! Older kids could even do this on their own!

1 can biscuit dough
1 can cream chicken soup
2 c. frozen veggies
2 c. cooked chicken
Mashed potatoes
1/2 c. cheese
1/4 t. salt, pepper, garlic powder & onion powder.

Dice chicken breast to bite sized pieces. (you cooked used pre-cooked chicken or left overs!)

Lightly grease 8 cups of a muffin tin. Press biscuits flat and place into greases tin.

Mix spices, soup, chicken, frozen veggies and a little milk in a bowl. Place into muffin cups lined with biscuits.

Bake 400 degrees for 15 minutes.

Top with mashed potatoes and cheese and place back into oven to brown and melt cheese. (not pictured, it was an after thought!)

Let cool and remove from tin. Enjoy!
