Recipe Of The Week: Country Apple Cake

3 c. all purpose flour
3 t. baking powder
2 c. + 5 T. sugar – divided
1 c. canola oil
4 eggs
1/3 c. orange juice
1/2 t. salt
2 1/2 t. vanilla
4 medium apples – peeled and chopped
2 t. cinnamon

In large mixing bowl, combine flour, 2 c. sugar, baking powder, oil, eggs, oj, salt & vanilla. Mix with mixer until thoroughly combined. In another bowl toss apples with remaining sugar and cinnamon.

In a well greased pan (I used a bunt pan but probably won’t next time), add a third of the batter followed by half the apples. repeat layering ending with batter.

Bake at 350 degrees for 1 1/2 hours or until toothpick comes out clean. (Cooking times may vary depending on type and size of pan used.) Serve with a dusting of powdered sugar if desired.
