Recipe Of The Week: Zebra Cake

Last week was our homeschool Science and Art fair. One of the categories that my oldest daughter, Audrey (age 6), wanted to enter was baking. She made a Zebra cake and received a blue ribbon (top rating). I am sharing her recipe with you this week for my Recipe Of The Week post.

Cake Ingredients:
2 cake mixes – we used two white cakes mixes so that the color would show. But, if you want traditional “zebra” colors use one chocolate and one white. Another option would be strawberry and white.
Coloring of choice (we use Wilton’s gel coloring so that we are not adding much extra liquid to the cake mix)
Frosting of choice (or see recipe below)

Start by making your cake mixes according to package directions.

After cake mixes are prepared add in desired coloring to create two different colored mixes. She chose pink & purple.
Start layering the cake mixes alternating colors. Do this by scooping about 1/4 c. one color and putting it in the center of the pan. Next, add 1/4 of other mix to the center. Continue this until pans are 2/3 full. It will look like a bulls eye.
Bake according to package directions. Remove and cool 5 or so minutes before attempting to remove from pan.
Once cakes are completely cooled, the decorating can begin. We had enough cake to do a three layer tier but decided to start small due to her age and stick to a single layer.
She frosted her cake with a pastel yellow frosting and decorated with a large pink daisy and small white daisy candies.

 
Frosting Recipe:
1 lb. confectioners sugar
1/2 c. W4 shortening (found at most bakeries or cake shops)

1 t. Butter Vanilla flavoring (found at most bakeries or cake supply stores)
1/4 c. water
Coloring of choice

Mix all ingredients with electric mixer until smooth and well combined. Add extra water (1-2 t.) if needed to thin for better spreading, mixing well again after addition.
