Recipe Of The Week: Lemon Squares

I had a group of ladies coming over last night for some good fellowship. Our church as started a group called 4×4’s, with the goal of helping to get to know other women from all generations. Four (or in our case 5 since it has grown) women are randomly selected and grouped together with the task of meeting at lease four times in the next four months. I am privileged to have four wonderful women in our group from all walks of life. Some I have known my entire life and some I have only passed in the hallways at church. I have enjoyed getting to know them all on a deeper level and share our struggles and triumphs. We have joined together in prayer for each other and praised God for the victories!

All that just for a recipe, I know! But it was my turn to host the group. We all brought sack supers and I made dessert…. My grandma’s recipe for Lemon Squares!

Ingredients:
Crust:
2 c. all purpose flour
1 c. butter, softened
1/2 c. confectioners sugar

Filling:
4 eggs
2 c. sugar
4 T. all purpose flour
1 t. baking powder
5 T. Lemon juice

In bowl, combine crust ingredients. Pat into a lightly greased 9×11 baking pan. Bake for 20 min. at 350 degrees. While baking mix filling ingredients with electric mixer until frothy. Pour over hot crust and continue baking for 20 more minutes. Remove from oven and cool completely before cutting. Serve with additional confectioners sugar if desired.
