I have found that the best way for kids to try new veggies is through pure trickery! This recipe is sure to get any kid to enjoy zucchini. In fact my “hater” didn’t even know it was there! After I told her she was more than willing to try it other ways!
1 c. finely grated zucchini (I used the food processor)
3 c. flour
2 t. baking powder
1/2 t. salt
2/3 c. sugar
2 large eggs
1/2 c. canola oil
1/2 t. vanilla
1/2 c. buttermilk
Juice and zest of 1 lemon
Preheat oven to 350 degrees. Grease or use muffin paper to cover 24 muffins.
In medium bowl mix together dry ingredients and set aside. In mixer cream butter and eggs. Add in oil, vanilla, buttermilk, lemon juice and zest. Beat until smooth. Alternate adding in flour and zucchini. Pour batter into muffin tins until 2/3 full. Bake for 25-30 minutes. Cool and top with Lemon Glaze!
1 c. powder sugar + 2-3 T. lemon juice!
