Ok, ok…Before you ask yourself “Really??? Meatloaf???” You have to bare with me!!! In my opinion meatloaf gets a bad rap… For many of you in conjures up bad childhood memories of sitting at the super table thinking “meatloaf, beetloaf, all I ever get is meatloaf!” and your parents saying “You can’t get up from the table until you finish your dinner!”
But, if done correctly meatloaf is a versatile budget friendly way to feed the family. Endless possibilities filled with new flavors that your family is sure to enjoy! In fact it is hard for me to even fix enough to go around!
So….Here is my “secret” recipe!!!!
2 lbs. Ground meat – (see comment below)
1 1/2 c. Italian style bread crumbs
1/4 of a large onion chopped fine or 2 T. dried onion flakes
2-3 Cloves garlic – minced (you can also use the jarred kind or 1 T. garlic powder)
1 T. Worcestershire sauce
2 T. Steak Sauce
1 c. Ketchup
1 t. Salt
1-2 t. Black pepper
1-2 t. Dry mustard
1 dab of “Prepared” Horseradish
The Meat…I switch this up a lot! Use whatever your favorites are or a combination. This is where the flavor comes from. Here are some of my favorites… Ground Beef/Ground Chuck, Ground Pork + Ground Beef, Ground Chicken/Ground Turkey + Ground Beef. (When using poultry cooking times may change and ingredients amounts may need altered for proper consistency and moisture content.) Another twist is to bake on a sheet tray covered in bacon!
Mix all ingredients in large bowl and place in a square baking dish forming a “loaf”. The idea is to have something that holds it’s shape but is very moist.
Bake in a preheated 350 degree oven for 45 minutes to an hour or until middle is no longer pink in color. Top should be browned and crispy but insides should be juicy! Enjoy with your favorite sides!!!
