Chocolate Chip Zucchini Cake with Cinnamon Chocolate Butter Cream

A friend of mine dropped off some zucchini giving me the perfect opportunity to dig through some of my forgotten recipes! I found this one that wounded like a winner! I have been wanting a good chocolate cake so I might as well pretend it’s healthy by adding in the veggie!! Then those no guilt over the fact that I ate most of the cake myself, right?  Haha!
Cake Ingredients:
1 3/4 c. sugar
1/2 c. butter – softened
1/2 c. oil
1/2 c. buttermilk
2 eggs
1 t. vanilla
3 c. flour
1/4 c. cocoa
1 t. baking soda
1 t. baking powder
1/2 t. salt
1/2 t. cinnamon
2 c. grated zucchini – drained
1 c. chocolate chips
Cream butter, sugar and oil. Mix in buttermilk, eggs and vanilla. In separate bowl mix all dry ingredients. (flour, cocoa, baking soda, baking powder, salt & cinnamon.) Blend dry ingredients into wet a little at a time. Stir in zucchini and chocolate chips.
Divide batter into 2, greased, 8 in round pans.
Bake in a 350 degree oven for 35-40 minute or until cake begins to release form sides and toothpick comes out clean.
Cool and top with frosting.
Frosting Ingredients:
1/2 c. butter – softened
4 c. powder sugar
1/2 c. cocoa
1 t. vanilla
1/2 t. cinnamon
3-4 T milk or cream
Mix all ingredients until well combined. Add milk/cream to achieve desired texture and spreadablity.
