You can’t get any easier than this one pot stove top recipe. It is yummy and easy clean up. Great for a quick evening meal when your on the go. It will feel you up for sure! I like this version of casserole also because it doesn’t have the cheese element. For some reason, I just don’t like chicken, rice and cheese together. This recipe would also work to use up some of that left over Holiday turkey your sure to have at the end of the week. Especially when you get tired of turkey sandwiches!
3-4 Chicken breasts or left over turkey
1 lb. broccoli florets (steamed)
1 family sized box rice mix (Rice-a-Roni)
In large pot cook chicken breasts in olive oil until the internal temp reaches 165 degrees and juices run clear. Remove and allow to cool. Once cool chop into bit sized pieces. If using leftover chicken or turkey you can skip that step and just chop into bit sized pieces.
Fix rice mix according to pkg directions. I like to use the chicken and garlic mix. During the last 10 minutes of simmer time, add in the steamed broccoli and chopped meat. Once cooked through and rice is tender serve!
