My Hubby’s birthday was last weekend and he wanted his favorite candy…divinity. This is also a popular Christmas classic!
2 1/2 c. sugar
1/2 c. water
1/2 c. light corn syrup
2 egg whites
1 t. vanilla
1/2 c. chopped pecans
In sauce pan combine sugar, water and corn syrup. Cook and stir over medium heat until mixture begins to bubble. Insert candy thermometer and continue cooking until temp reaches 260 degrees or hard ball state. adjust temp as necessary to keep the mixture bubbling. Remove from heat.
In large mixing bowl beat egg whites with electric mixer until they form stiff peaks. Slowly add in sugar mixture and continue beating for 3 minutes. Add in vanilla and beat until mixture starts to lose it’s gloss anf hardens. Mix in nuts.
Drop by spoonful onto wax paper lined baking sheets and allow to cool.
Store in air tight container.
