Holiday Cupcake Wreath

We had a 4-H Appreciation dinner this last weekend and I decided to make something festive to take. I thought these Holiday Cupcake Wreaths did the trick!

I used a cake mix…gasp… to make the cupcakes but I did use homemade icing. (see recipe below) I think that the Pillsbury Traditional mixes work the best for cakes. I do add in extra vanilla and some almond extract to liven it up. I then stuck on a red bow (without glitter) and some candy decorations. The lights are my favorite but the holly is nice too.

My favorite frosting recipe…

1/2 c. W-4 shortening (found in cake supply stores)

1 T. Butter vanilla flavoring (also found in cake supply stores)

2 lb. Powdered sugar

1/2 c. cold water

Coloring of choice – I like the Wilton gel colors

Mix all ingredients with electric mixer until smooth. You may need to add more sugar or water to reach desired texture depending on whether you are piping or spreading.
