Cream Puffs

My hubby has been so great in letting me get out for a girls night once a week and this is what I took with me for a treat last week…Cream Puffs! I had eggs to use up since our poultry girls have been laying their hearts out. Cream puffs might sound intimidating to make but they are super easy.

Cream Puffs (makes 24)

Ingredients:

2 c. Water                                     2 c. All-purpose flour

1 c. Butter                                     8 Eggs

1/4 t. Salt                                      Filling of choice (see recipe below or use whipped cream or pudding)

In saucepan, combine water, butter and salt. Bring to boil. Add flour all at once, stirring vigorously. Cook and stir until mixture forms a ball (see picture below). Remove from heat and allow to cool for 10 minutes. Using mixer, add in eggs 1 at a time, beating well after each addition.

 Transfer dough into a piping bag and pipe onto  greased baking sheets.

Bake in a 400 degree oven for 30-35 minutes or until golden. Transfer cream puffs to wire rack and allow to fully cool.

Once cool cut tops from puffs; remove any soft dough from the inside. Fill with pastry cream, whipped cream or pudding. Replace tops and dust with powdered sugar if desired.

Pastry Cream

Ingredients:

2 c. milk

1/2 c. sugar

1/2 t. vanilla

4 egg yolks

1/4 c. cornstarch

2 T. butter, cut into pieces

In sauce pan combine milk, 1/4 c. sugar and vanilla. Cook over medium heat until comes to a simmer. In medium bowl whisk egg yolks, cornstarch and remaining sugar. Whisking CONSTANTLY, add milk mixture to egg mixture 1/2 c. at a time. Pour back into pan and cook over medium heat until it thickens (about 2 minutes). Add in butter and stir until melted and incorporated. Now you can add in flavorings such as lemon, melted chocolate chips, etc… Cool completely and use to fill cream puffs.

  1. Those look delicious. I have never been able to perfect the art of cream puffs. I’m not sure what I keep doing wrong!
    I do treasure my girls nights out as well 😉
