Pineapple Pecan Cake


I love old fashioned cakes. The kind that your grandma used to make or that you can imagine taking to a southern church picnic. Well, this is one of those cakes and on top of that is is super easy to make!


2 c. flour                                                       2 eggs

2 c. sugar                                                     1/3 c. oil

1 tsp. baking soda                                   1 can crushed pineapple (DO NOT drain, use the juice also)

1/2 c. chopped pecans


Combine all ingredients and mix well. Pour into lightly greased and floured 9 in round baking pans. Bake in a preheated 400 degree oven for 30-40 minutes or until cakes begin to pull away from the sides and knife comes out clean when inserted into the middle.

1 (8 oz.) pkg. of cream cheese, softened

1 stick of butter, softened

2 c. powdered sugar

1/2 c. pecans

Mix above ingredients together until smooth. Add in a splash of heavy cream to thin is frosting is to thick.
