This time of year I always have an abundance of summer squash and zucchini. One of my favorite ways to eat is is to make these fritters.
2 cups raw squash and/or zucchini – grated (see below)
1 cup onion – peeled and grated (see below)
1/4 c. flour
1/4 t. baking powder
2 t. sugar
1/2 t. salt
1/2 t. pepper
dash of red pepper
1/2 t. garlic powder
fresh herbs like parsley, basil, or dill – chopped
Wash squash, pat dry, and grate. Now the old fashioned way says to use a box grater. However, It is much faster to use the food processor with grater attachment or just pulse it until it is finely chopped. I also add in the onion and let the processor do the work for me. No one wants grated knuckle in their fritters anyway! haha
Add in the eggs and mix well. Then add the rest of the ingredients mixing well.
In large skillet heat 1 pad of butter with cooking oil, I like to use olive oil. Once it is heated turn down the heat to avoid the oil from burning. Drop spoonfuls of batter into the hot skillet. cook for about 3 minutes (or until golden brown) then flip and cook the other side for about 3 minutes. Once golden brown, remove to paper towel lined plate to drain and cool. Enjoy!
