Blackberry Pepper Jam

It is blackberry season! Actually it is just winding down but you could also substitute in just about any berry. This is one of my favorite recipes to use with balckberries. It cans easily and is yumm-o! It makes great Christmas presents or a treat to take to a party. Just dump a jar over some cream cheese and grab a box of crackers!

5 c. fresh blackberries

1/2 c. jalapeno peppers finely chopped (I leave the seeds in half the peppers)

4 c. sugar

1/4 c. lemon juice

1 pkg powdered pectin

Wash and pick through blackberries to make sure they are clean.

Place one cup in bottom of pot and smash with potato masher.

Add in remaining berries, jalapenos, sugar, and lemon juice.

Cook mixture over medium heat, stirring often. Cook until sugar is dissolved.

Bring mixture to simmer for 15 minutes or until berries are broken apart. (you may need to run masher through again.)

Stir in pectin. Bring to rolling boil for 2 minutes.

Ladle into 1/2 pint jars and process in boiling water canning bath for 10 minutes.

Makes about 5 – 1/2 pint jars.
