Sweet Potatoes and MARSHMALLOWS!


Remember the yummy ham recipe I shared with you last week? I mentioned something about sweet potatoes and marshmallows! Well today is your lucky day because that is the recipe that I’m sharing with you!

Boil sweet potatoes just until skins start to peel. Do not boil them until they are fork tender, you will just end up with mush!

Drain and let cool until you can safely handle or just burn your finger prints off like i do haha

Slice potatoes in half lengthwise.

Melt 1 stick of butter in oven safe dish. Place sliced potatoes on top of butter and dot with a few pads of additional butter. Sprinkle with a thick layer of brown sugar and bake at 350 degrees for 30 min or until tender.


Remove from oven and sprinkle on a layer of mini marshmallows. Return to oven for 10-15 min or until marshmallows are toasted and gooey!
